Cashew Sour Cream

A healthy, dairy-free version of sour cream.
Course condiment
Servings 1 1/2 cups (approximately)

Ingredients

  • 1 cup raw cashews, soaked overnight or a minimum of 4 hours
  • 2 Tbsp water or more as needed
  • 1 Tbsp lemon juice or more to taste
  • 1 Tbsp apple cider vinegar or more to taste
  • 1/8 tsp salt

Instructions

  • Add all ingredients to your *high-speed blender and blend on high until smooth. If the mixture is too thick, add more water. Taste and add more lemon and or vinegar if desired.

Notes

*If you do not have a high-speed blender, this can be done in a regular blender or a food processor, but make sure the cashews have been soaked for at least eight hours. Mix several minutes, until smooth
