Nooch & Herb Baby Potatoes

Baby potatoes, crisped up with nooch and Italian seasonings, make a perfect, easy-to-make side dish or bite-sized snack!

Ingredients

  • 1 - 1 1/2 lbs baby potatoes cut in half
  • 3 Tbls olive oil
  • 1/4 cup nutritional yeast "nooch"
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp dried basil
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1/4 tsp onion powder
  • 1/4 tsp paprika
  • 1/8 tsp dried sage
  • 1/8 tsp cayenne optional
  • 2 Tbls fresh chives chopped (optional)
  • vegan ranch for dipping (optional)

Instructions

  • Preheat oven to 400° F
  • Pour tablespoons of the olive oil into the bottom of a 9"x13" baking dish and coat evenly using a brush.
  • Mix the nutritional yeast with the next 10 ingredients into a small - medium sized bowl. Pour this mixture onto the bottom of your baking dish, over the oil. Spread evenly using the back of a spoon.
  • Place potatoes, cut side down, into baking dish. Firmly press down on the top of each potato.
  • Brush the tops of the potatoes with the remaining 1 tablespoon olive oil.
  • Place potatoes in oven for 35 minutes.
  • Once potatoes are finished roasting, sprinkle with chopped fresh chives, if using. Serve alongside vegan ranch for dipping.
