Add all of the ingredients to your electric pressure cooker. Secure the lid and make sure the valve is set to the sealing position. Set the cooker to high pressure for 3 minutes, and once cooking has finished, allow for a natural release (this will take approximately 18 minutes).
After the cooker has naturally released all of the steam, switch the valve to the venting position, and carefully open the lid. Fluff and stir rice with a fork. Taste and add more salt, if desired.
If using, garnish individual servings with cilantro leaves or micro cilantro.
