Chipotle Lime Jerky Basmati

This new recipe for the Instant Pot is the perfect way to add incredible flavor to your rice! By using Chipotle Lime Coconut Jerky, cilantro, and onion, we give what would otherwise be a boring side dish, something so tasty you’ll be going back for seconds!

I’ve recently discovered these delicious vegan snacks by Seva Foods and have decided to play with them a bit in my kitchen. Their jerky is great for a healthy between-meal snack, but I wanted to figure out how to incorporate it into my cooking. This is the first recipe I came up with and let me tell you, it’s definitely a win!

The jerky is made from coconut and is non-GMO, soy-free, gluten-free, of course, vegan, and without any added sugar or oils — ya gotta love that, am I right!? By itself, it’s a delicious, spicy snack, but if you’re not a fan of the heat, don’t fret, when added to the rice the outcome is a mild dish. I title this as a side dish, but what should you make it with?  It has the right seasonings to use as a side-dish for some Mexican cuisine, but is also versatile enough to add to any meal! In the picture below you can see I used it to accompany some Tofu en Adobo (“fish” and chips, I mean… “fish” and rice!).

I chose to use an electric pressure cooker for this recipe for two reasons; one, everyone has been kind of head over heels about the Instant Pot recently, and two, since I bought mine, it’s become my go-to method for cooking rice. Oh, I have a third reason as well, you don’t see many VEGAN Instant Pot recipes! Like, WTH!? So here you go, this is my number two on the blog. Why have jerky in rice? Will it be chewy? No, it won’t! This is because the jerky rehydrates with the rice as they cook. As far as why, because it’s delicious! I like to think of it kind of like having seasoned, vegan bacon pieces in my pilaf. Love it!

Chipotle Lime Jerky Basmati

Delicious Instant Pot basmati rice seasoned with chipotle-lime flavored coconut jerky.

Equipment

  • Instant Pot/Electric Pressure Cooker

Ingredients

  • 1 cup white basmati rice rinsed well
  • 1 cup water
  • 1/2 cup white onion diced
  • 1/2 cup chopped cilantro
  • 1/3 cup Chipotle Lime Coconut Jerky
  • zest of 1 lime
  • 2 Tbsp fresh lime juice
  • 1 large clove garlic, minced
  • 1 tsp sea salt or more to taste

Optional for topping…

  • handful cilantro leaves or micro cilantro

Instructions

  • Add all of the ingredients to your electric pressure cooker. Secure the lid and make sure the valve is set to the sealing position. Set the cooker to high pressure for 3 minutes, and once cooking has finished, allow for a natural release (this will take approximately 18 minutes).
  • After the cooker has naturally released all of the steam, switch the valve to the venting position, and carefully open the lid. Fluff and stir rice with a fork. Taste and add more salt, if desired.
  •  If using, garnish individual servings with cilantro leaves or micro cilantro.
