Ingredients
1cuprolled oats, gluten-free if necesary(quick oats work too)
1/2cupnatural peanut butter (unsweetened)
1/2cupalmond flour
1/2cupunsweetened, shredded coconut
1small banana, mashed
1/4cup100% pure maple syrup
1/4cupcoconut sugar
1Tbspcoconut oil
3/4tspbaking powder
1/2tspvanilla extract
1/4tspsea salt(my peanut butter was salted, if yours is not you may want to add a wee bit more salt)
1/2cupvegan chocolate chips*soy-free if necessary
Instructions
Preheat oven to 350°F.
Set aside the chocolate chips. Mix all remaining ingredients in a large mixing bowl until well combined.
Stir the chocolate chips into the batter.
Distribute spoonfuls of 1 level tablespoon worth of batter onto parchment-lined cookie sheets. Take the back of the spoon and flatten each ball of dough to resemble cookies.
Place cookie sheets in middle rack of the oven and bake for 14 - 16 minutes.
