Asian Noodle Salad with Peanut Sauce

Looking for an Asian side salad? You’ll love these Thai inspired flavors. With a delicious peanut sauce and cilantro, mixed together with edamame noodles and some slaw veggies.

I love when I make things by accident. That’s what this dish was, an accident. I used to always make this delicious Asian Slaw, as a side dish. I loved the flavors. One time, I was quickly putting everything together and misread the ingredient amounts. I accidentally added way too much peanut butter. I think I must have read the measurement from another ingredient, because I could have sworn it said 1/4 cup. I immediately realized what I did, and was going to take some out, but decided it might actually work. Later, when we were eating I thought, “This would be perfect with some noodles in it!”

The next time I made it I added edamame noodles, extra peanut butter, and less cabbage and carrots. It worked perfectly, and I now had my favorite side salad for Asian meals. I don’t think I’ve made it as a slaw since. To make this vegan, I do also change the honey from the original recipe to blue agave. The agave works out nicely.

Edamame spaghetti is my favorite gluten free noodle. When we first discovered it, we found it at Costco. Since that discovery, I’ve been sure to always keep some on hand. When I happen to run out and can’t make it to Costco, they also now carry it at my local health food store. I like to mostly use it for Asian dishes, but it’s delicious with an Alfredo sauce as well (vegan Alfredo, of course)! If you don’t want to use edamame noodles, or if you can’t find any, buckwheat noodles would probably also work, or soba if not gluten free.

Like I said, this salad goes great as a side dish, but would also work nicely for a lunch. Once for lunch, I topped it with some crispy baked tofu, and that was de-li-cious! You can also impress your friends by bringing it to your next pot luck (always easier to bring something which doesn’t have to be kept warm). Asian Noodle Salad with Peanut Sauce

Ingredients

  • 1/4 cup natural peanut butter without added sugar
  • 1/4 cup blue agave syrup
  • 1/4 olive oil
  • 1/4 cup rice wine vinegar
  • 1 Tbsp tamari or gluten free soy sauce, regular soy sauce if not gluten free
  • 1 tsp sesame oil
  • 1/2 tsp sriracha
  • 1/2 tsp sea salt
  • 1 Tbls ginger minced
  • 1 tsp garlic minced
  • 6 oz edamame spaghetti buckwheat noodles will also work, or other soba noodles if not gluten free
  • 1 cup cabbage shredded
  • 1 cup carrots grated
  • 1 cup shelled edamame frozen
  • 1/2 red bell pepper diced
  • 1/2 cup cilantro
  • 2 green onions sliced
  • 1/2 cup peanuts plus more for serving, chopped

Instructions

  • Cook edamame and noodles according to package instructions. Drain and place in fridge to chill. Alternatively you can do an ice bath, but make sure to drain the water really well afterwards.
  • Whisk together the first 10 ingredients listed.
  • Stir in remaining ingredients. To serve, sprinkle with more peanuts (optional). Enjoy!
